Sweet & Spicy Roasted Vegetables

INGREDIENTS:

  • 2 lbs mixed vegetables

  • (pumpkin, carrots, onions, sweet potatoes, fennel bulb, or any seasonal vegetable you have)

  • 3 tbsp olive oil

  • 1.5 tbsp maple syrup

  • 1tsp smoked jalapeno powder or paprika

  • 1 tsp sea salt

  • 1 tsp sesame seeds

  • Thyme sprigs

  • 3 tbsp pomegranate seeds

PREPARATION:

  1. - Peel the vegetables and chop them into pieces about the same size.

  2. - Mix together the oil, maple syrup, jalapeño powder, salt, sesame seeds, and thyme in a large bowl.

  3. - Add the vegetables and toss until coated.

  4. - Place on a baking sheet and bake in the oven for about 20 minutes at 400 degrees F.

  5. - Toss and bake for 10 minutes more or until golden brown.
